Grilled Artichokes with Herby Dressing

Perfect for a Fathers Day BBQ or any grilling occasion.   

If you’re firing up the grill this summer, keep this recipe in mind as artichoke season is upon us and they are TASTY.   They are a vegan delight.

Grilled Artichokes with Herby Dressing  

Servings: 4-6

Total Time: 50-60 minutes

  

INGREDIENTS:   

3 to 4 large globe artichokes  

1 bay leaf  

2 cloves garlic, peeled and sliced in half  

2 cups chopped mixed fresh herbs such as oregano, thyme, basil  

1/2 cup extra virgin olive oil  

1 shallot, roughly chopped   

1 lemon, juiced   

1 Tablespoon of Apple Cider Vinegar   

3 to 4 large globe artichokes  

1 Teaspoon Kosher Salt  

  

INSTRUCTIONS:  

  

1. Clean and trim the artichokes and cut in half. Scoop out the chokes. Use a strong metal spoon to scoop out the fuzzy chokes and the small inner artichoke leaves.   

  

2. Boil a large pot of water with a steaming basket inside. Make sure that the water level doesn’t touch the bottom of the steaming basket. When water boils, place as many artichoke halves as you can fit in a single layer. Place them exposed side down. Add the bay leaf and the garlic cloves to the water. Steam artichokes for around 25 minutes. You will know that it is steamed if you are able to easily piece the artichoke heart with a knife or easily pull out the outer leaves.   

  

3. Combine the remaining ingredients in a blender and blend until smooth.  

  

4. Prepare your grill for direct, high heat. Use a pastry brush to brush the artichoke all over with the herb infused dressing you just blended.   

  

5. Place the artichoke halves cut-side-down on the grill grates. Cover, and grill for 5 to 10 minutes, until you have nice grill mark on the cut sides of the artichokes.  

  

6. Serve with remaining herby dressing drizzled over the top or served on the side for dipping.
