Pulling from 20 years of experience as a vegetarian, Michele takes her clients through the health benefits of plant-based ingredients and shares her cooking techniques, gives tips for stocking a healthy pantry and fills her clients in on where to find the best, freshest organic ingredients.

First Course: Kale salad with avocado, cherry tomatoes, sunflower seeds, scallions and fresh lemon and olive oil
Second Course: Mushroom and Asparagus Risotto with Peas in a Basil Truffle Fusion
Third Course: Whole Wheat Crepes with Nutella, Strawberries, and Bananas
First Course: Spring Greens & Strawberry Salad… Mixed spring greens, sweet strawberries, salty feta, sliced almonds, and a lemon vinaigrette.
Second Course: Southwestern Quinoa… Fresh corn from the cob mixed with kidney beans, fresh vegetables, and a hint of a spicy kick.
Third Course: Spaghetti Squash and Black Bean Tacos with Queso Fresco… The mild sweetness of squash plays excellently off the sharp lime, spices, onion, and herbs in a great taco, and couches the ferocity of a favorite hot sauce.
Fourth Course: Vanilla Cake… A light and moist homemade cake topped with a fudge-y and decadent frosting. Served with fresh strawberries and raspberries if desired.
