My spiralizer has come in handy with so many different vegetables, but I love using it with zucchini or summer squash the most. I bought the spiralizer when it first came out, but now they sell veggies already spiralized at places like Whole Foods, so you do not even need the gadget to make this recipe! I call this recipe "Zucchini Linguine" but is it REALLY a pasta substitute? Not really. It is delicious, but let's call a spade a spade. This dish is a perfect light lunch. Sometimes I add a rinsed and drained can of white beans to this dish for added protein and it goes SO WELL with my pesto sauce, romesco or tomato sauce zucchini linguine dishes. All of those sauces pair really well is zucchini linguine. Pictured above is the pesto version, but you can click on any of the sauces I mentioned and be led to their recipe to pair with zucchini linguine. For those of you who eat animal protein, other proteins that go well are sausage, grilled chicken or shrimp. Besides white beans, I like topping my zucchini linguine with tomatoes, sun-dried tomatoes, chopped basil, walnuts or mushrooms. Even a simple mixture of olive oil, garlic, oregano, and red pepper flakes with zucchini linguine is delish!

It's zucchini season!

Our garden was BURSTING with zucchini (until the damn zucchini bug got to the plant and killed it... major bummer). I have so much zucchini in my fridge, so stay tuned for a few more zucchini based recipes. Feeling like you will still miss pasta even if you are eating this dish? My husband is in your camp. Solution? Try adding half whole-wheat or chickpea pasta (to keep it a gluten-free option if you prefer) and half spiralized zucchini. That way if you are feeling like "I am REALLY craving a bowl of pasta" vs "But it's bathing suit season", this dish is the answer to that issue.

Zucchini Linguine

Ingredients

  • 2 large or 4 small organic zucchini

Instructions

  1. Use a spiralizer to spiral zucchini.

  2. Use a paper towel to press out moisture.

  3. To serve warm, heat on a skillet with a drizzle extra virgin olive oil on medium-high heat. Cook for a few minutes before adding prepared sauce and toppings.

  4. To eat raw, combine the spiralized zucchini with sauce and toppings.
