This kale, quinoa, and roasted sweet potato bowl brings together a few simple ingredients that each do their part: sweet potatoes with golden edges, tender garlicky kale, fluffy quinoa, and a creamy lemon-tahini dressing. A sprinkle of pumpkin seeds or walnuts adds crunch.

Ingredients

For the bowls

  • 2 medium sweet potatoes, about 1½ pounds total, cut into ½-inch cubes

  • 3 tablespoons extra-virgin olive oil, divided

  • ½ teaspoon smoked paprika

  • ¾ teaspoon kosher salt, divided, plus more to taste

  • ¼ teaspoon freshly ground black pepper

  • 1 cup dry quinoa, rinsed

  • 2 cups water

  • 1 large bunch kale, tough stems removed and leaves chopped, about 6 packed cups

  • 2 garlic cloves, minced

  • 2 tablespoons water, plus more as needed

  • 1 tablespoon fresh lemon juice

  • ¼ cup roasted pumpkin seeds or toasted walnuts

For the lemon-tahini dressing

  • ¼ cup tahini

  • 3 tablespoons fresh lemon juice

  • 1 teaspoon pure maple syrup

  • ¼ teaspoon garlic powder

  • ¼ teaspoon kosher salt

  • 3–5 tablespoons water, as needed to thin

Instructions

  1. Roast the sweet potatoes: Preheat the oven to 425°F. Place the sweet potatoes on a large rimmed baking sheet and toss with 2 tablespoons olive oil, the smoked paprika, ½ teaspoon salt, and the black pepper. Spread into a single layer, leaving a little space between the pieces. Roast for 25–30 minutes, tossing halfway through, until tender and golden around the edges.

  2. Cook the quinoa: While the sweet potatoes roast, combine the rinsed quinoa and 2 cups water in a medium saucepan. Bring to a boil, cover, and reduce the heat to low. Simmer for about 15 minutes, or until the water is absorbed. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork.

  3. Sauté the kale: Heat the remaining tablespoon olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, just until fragrant. Add the kale, remaining ¼ teaspoon salt, and 2 tablespoons water. Toss, cover, and cook for 2–3 minutes. Uncover and sauté for another 2–4 minutes, until tender and any excess water has evaporated. Add a splash more water if the pan becomes dry before the kale softens. Remove from the heat and stir in the lemon juice.

  4. Whisk the dressing: Combine the tahini, lemon juice, maple syrup, garlic powder, and salt in a small bowl. Whisk in the water, 1 tablespoon at a time, until smooth and pourable. Tahini can thicken when lemon juice is first added, keep whisking and adding water until it loosens.

  5. Build your bowls: Divide the quinoa, kale, and sweet potatoes among four bowls or meal-prep containers. Drizzle with the dressing and sprinkle with pumpkin seeds just before serving.

A Little Prep, Several Lunches

The beauty of this bowl is that all three main components can cook at the same time. Get the sweet potatoes into the oven, put the quinoa on the stove, then sauté the kale and whisk the dressing while everything finishes.

For packed lunches, store the dressing separately and add the pumpkin seeds just before eating so they keep their crunch. Refrigerate the prepared components promptly in shallow, airtight containers and enjoy within 3–4 days. Use an insulated lunch bag with ice packs when a refrigerator isn’t available.

If you prefer a warm bowl, reheat the quinoa, kale, and sweet potatoes before adding the dressing and seeds.

Make It Your Own

  • Add chickpeas: Divide a drained and rinsed 15-ounce can among the bowls for an extra plant-protein boost.

  • Swap the greens: Use chopped Swiss chard or baby spinach, adjusting the cooking time until tender.

  • Try another grain: Brown rice or farro works well here. Choose quinoa or rice if you need the bowl to stay gluten-free.

  • Add something tangy: Finish with a spoonful of pickled red onions.

Tips for a Better Bowl

Give the sweet potatoes room: A crowded pan traps moisture. Use two pans if needed to help the potatoes brown.

Cook the kale until it’s tender: Removing the tough stems and adding a little water to the skillet makes a big difference, especially when you plan to eat the bowl chilled.

Keep the dressing pourable: Tahini dressing thickens in the refrigerator. Stir in a splash of water before serving.
