Thai Peanut Tofu Lettuce Wraps

Ingredients:

  • 1 block extra-firm tofu, pressed and cubed

  • 1 tbsp tamari or soy sauce

  • 1 tbsp sesame oil

  • Butter lettuce or romaine leaves

  • Julienned veggies: carrots, cucumber, red bell pepper

Peanut Sauce:

  • 3 tbsp peanut butter

  • 1 tbsp tamari

  • 1 tbsp maple syrup or honey

  • 1 tsp grated ginger

  • Juice of 1 lime

  • Water to thin

Instructions:

  1. Sauté tofu in sesame oil and tamari until golden and crisp.

  2. Whisk together peanut sauce.

  3. Assemble lettuce cups with tofu, veggies, and drizzle with sauce.

Protein: ~18g per serving
